Frugal Friday: Zucchini Freezer Waffles

Zucchini is still going strong in our CSA boxes lately. I feel like I've tried every preparation of zucchini that I can think of:

I've done sweet, savory, side, main, and everything in between, it seems!  But I'm not done yet!

I had an unexpected block of time to myself this weekend,  and a giant zucchini from 2 CSA boxes ago staring me in the face.  I knew I wanted to make freezer waffles -- these are a great  healthy afternoon snack for the kids, especially spread with a little homemade strawberry jam -- yum!

So I pulled out my Better Homes and Gardens New Cook Book, Bridal Edition  - one of my absolute favorites -- and went to work doctoring up their recipe for waffles to include some healthier ingredients.  And yes -- it included a TON of zucchini!

Healthy Freezer Waffles
(inspired by Better Homes & Gardens)

  • 1 cup Whole Wheat Flour
  • 3/4 cup white flour
  • 1/4 tsp salt
  • 1 tbsp baking soda
  • 2 tbs raw honey (only for children over age 1)
  • 1 egg
  • 1 3/4 cup milk
  • 1 cup finely shredded zucchini (I used the finest setting of a box shredder)
  • 1 tsp cinnamon

1. In a medium bowl, mix together the flour, baking powder, and salt.
2. In another medium bowl, beat eggs, then add milk, honey, zucchini, and cinnamon.  Add this mixture to the flour mixture, stir until moistened.
3. Pour 3/4-1 cup batter at a time into a heated, greased waffle maker. Bake 3-5 minutes, until waffle is golden brown and slides easily with a fork out of waffle maker. Repeat with remaining batter.

This recipe is easily doubled, and can be frozen for up to 3 months. The waffles are easily defrosted in a toaster or toaster oven, and taste great spread with a little organic jam.

New! Seventh Generation Rewards

Seventh Generation just initiated a new rewards program! It is similar to the Stonyfield Farm rewards program, where you input codes from products you buy.  These codes earn you points which you can redeem for coupons or free products. If you're going to buy the products anyway, why not get "credit" for doing it?

Something that is different and exciting about the Seventh Generation Rewards program is that you have a few different ways to earn points. You can:

  • Purchase products and input the code on the package
  • Refer a friend through email
  • Watch short (1-2 minutes) videos and answer easy questions afterward
I've already earned 4 points just for watching a video and taking a quiz, which took me less than 2 minutes total.
Some of the rewards include:
  • $2 off Seventh Generation product coupon
  • Free Organic Milk
  • Free Annie's Homegrown product
  • Free Stonyfield Farms yogurt
  • Free Seventh Generation products

Borders Going Out of Business Sale = Replenished Gift Closet

My gift closet has been looking kind of sad lately, so I've been looking for opportunities to replenish it a bit in preparation for the upcoming holiday season. Ok, I know it's only August. But I find that by buying early, I spend less, am less stressed during the month of December, and have more time to find great gifts that I hope the recipients will really love.

With the gift closet in mind I took advantage of some free time this past weekend to visit Borders’ Going Out of Business Sale. If you haven’t heard, all Borders stores across the country are closing.  They are liquidating every bit of merchandise in their stores, from books to calendars to DVDs to fixtures and furniture.
When I was at Borders this past weekend, everything in the store was 40-60% off the lowest marked price. I have a mental list of who I need to buy for in the next 6 months. Since my list is mostly children, I started looking in the Children’s bargain books area.  I found several large sticker books for only $1.99, an Alex Toys crafting kit for $7, and a set of large Sesame Street flash cards for $3.  Nothing I bought was over $10.  I estimate that I will use these items for 4-5 children’s gifts, plus various stocking stuffers for my kids and husband.
I did look briefly for myself, as I am always in the market for good cookbooks for ideas and inspiration. I found this:
From Gangsta’s Paradise to Cookin’ with Coolio? I guess he was just playin' when he said, "half of them ain't lookin' what's goin' on in the kitchen, but I don't know what's cookin'. " Well played, Coolio.
Anyway -- the point is, I didn’t find any cookbooks to buy, which is probably a good thing. It kept my spending in control. My total out of pocket after the discounts was $64 -- more than I wanted to spend, but not bad if I am able to divide the trip into 5-6 gifts.

Oh, and if you're my real life friend, and you have a kid, and you invite my kids to a birthday party, well, you have a little preview of what we might be bringing. :)

A final note about Borders: I spoke to the manager when I was there and she indicated that the sale would probably continue into the middle of September. I would guess that starting around September 1, prices will start dropping even more, until they reach 80-90% off.  Of course, it's always a gamble to know how much inventory there will be left at that time.  I'll probably be back then, though.

Wegmans: $1 off Tortillas!

This week's Wegmans' coupon is for $1 off Tortilla Wraps.
You may print the coupon multiple times, but can only use it once per transaction.   I'm happy to see this coupon because we use these wraps for quesadillas all the time!  Wegmans tortillas range from $1.69-$2.39 so this should make for a decent deal.

Eden Organic Beans on Amazon

Eden Organic Cannellini White Kidney Beans, No Salt Added, 15-Ounce Cans (Pack of 12)
Eden Organics are my favorite brand of canned beans, particularly because the cans contain NO BPA.

I ordered these from Amazon last time there was a sale, and I definitely will again.  I love the convenience of just popping open a can and adding beans to a recipe, plus I can feel good about the fact that they are organic and BPA-free.

Several of Eden Organic's bean varieties are listed as Subscribe & Save deals, which means you will get 15% off Amazon's normal price. Here are the best deals I've found:

Eden Organic Black Beans, No Salt Added, 15-Ounce Cans (Pack of 12) -- $15.71 ($1.31/can)
Eden Organic Garbanzo Beans, No Salt Added, 15-Ounce Cans (Pack of 12) -- $15.71
Eden Organic Cannellini White Kidney Beans, No Salt Added, 15-Ounce Cans (Pack of 12) -- $17.95 ($1.50/can)
Eden Organic Navy Beans, No Salt Added, 15-Ounce Cans (Pack of 12) -- $17.95

You can find more deals on Eden Organic Beans here.

Remember, you can cancel Subscribe & Save at any time after your order ships.

It's Weekly Menu Plan Time!

In preparation for my weekly shopping trip to Wegmans,  I looked through all the cabinets refrigerator to see what I needed to use up this week.  You'll also notice that there are a couple of repeats from last week. I never made the pork ribs because I'm afraid to grill them (our grill is old and occasionally shoots fireballs out the side), and it was hot so I didn't want to bake them in the oven. Now that it's a little cooler, I'm going to give it a try.

Also, my husband loved the Eggplant Parmesan from last week so much, he asked to have that again. Since we got another batch of gorgeous graffiti eggplant in our CSA basket this week, I couldn't say no.

The funny thing is I can make all of the components for all of these dinners using items already in the freezer, refrigerator, or pantry.  I'm really happy about that -- it's what is helping me stay within my tight budget right now.  I shopped only for fresh staples like cheese, milk, and bread (and, of course, my Stacy's Pita Chips).

Here's the dinner menu for this week:

Monday:  Pasta with Sauteed Swiss Chard and Garbanzo beans (I forgot the greens were in there and needed to use them up!)

Tuesday: Broccoli Stir-Fry with Rice Noodles

Wednesday: Pork Ribs with Grilled Zucchini & Onions

Thursday: Chicken Pasta Primavera

Friday: Dinner with Family

Saturday: Tacos (using meat from my freezer cooking day) with Fresh Tomatillo Salsa

What are YOU eating this week?

Wegmans Trip: Rocking the Budget

I have been under my $80 grocery budget several times in the past several weeks, and I can attribute my savings on a few specific actions:

  • Meal planning based on what's already in the pantry/freezer
  • Stocking up on staples at the rock-bottom price (we're still eating chicken I bought for $1.49/lb in May)
  • Participating in a CSA.  Yes, I know I am paying for this separately, but since we pay for (and budget for) that expense up front, it helps the weekly bills to stay low
  • Using coupons for almost everything  (check out Natural & Organic Coupons category in the sidebar for a partial list of available coupons)
Here's my trip for this week:
The highlights:

Silk Almond Milk -- $2.39 after using this coupon

Philadelphia Cooking Creme -- 2 @ $1.19 each after this coupon

Yobaby 4-pack -- FREE after Stonyfield Rewards Coupon

$1 off any Pint of Frozen Kefir

I'm not sure if any stores around me are even carrying Lifeway Frozen Kefir yet, but I printed this coupon anyway since it doesn't expire until 12/31/2012.

Kefir is basically a yogurt-type drink that is 99% lactose free and 100% gluten free, which makes it easy for those with food allergies (like me!) to digest. Like all yogurt, it contains probiotics to help with digestive health.

My kids think this is a smoothie and drink it all the time! I'm so excited there is a frozen version available, since I can't eat ice cream.  Head over here to Mambo Sprouts to print your $1 off coupon out!

Family Fun Magazine only $3.76/year

Best Deal has another great weekly special going on: Family Fun Magazine for only $3.76/year.

I subscribe to Family Fun, and it's full of ideas for crafts, snacks, and activities for kids ages 3 through 12.

Make it Yourself Monday: Seafood Dipping Sauce

My husband and I had an unexpected chance to go out for dinner last week at The Crab Shack, and since we had a Groupon, of course we jumped at it.  Crab legs are my husband's absolute favorite splurge item, so of course that is what he ordered, and I ordered the most beautiful crab cake sandwich.

On the side of my sandwich was an absolutely delicious dipping sauce. I could seriously eat whole spoonfuls of it, it was so savory and scrumptious.  I vowed to try to replicate it at home, and this is what I came up with:

Seafood Dipping Sauce

  • 3 1/2 tbs mayonnaise (I used Veganaise)
  • 1 tbs ketchup
  • 1/2 tsp yellow mustard
  • 2 tsp Old Bay seasoning
  • 1/2 tsp Pampered Chef Smoky Barbecue Rub
  • 1/4 tsp paprika
  • dash ginger
Mix the mayo, ketchup, and mustard together thoroughly, then add spices. That's all there is to it! A delicious sauce to accompany any seafood dish. You could even use this as a barbecue sauce for grilled salmon. Yum!

For comparison, the dollop on the right is from The Crab Shack. The dollop on the left is the one I made.  Pretty close!
