Frugal Friday: Homemade Salsa with my CSA Leftovers

It’s funny how, when you put an idea out there -- into the vast wide universe -- it comes back to you.  Not to get all hippy-dippy, but this weekend I was thinking about making some beautiful fresh salsa with a few leftover tomatillos I had, and later that day, my brother-in-law offered me all the tomatoes I could pick from his garden. Score!

I had to use these up, and I knew I had more than one serving’s worth of salsa here, so I decided to freeze what I made.  
First, I gathered everything from my pantry and refrigerator that could remotely be a part of a salsa. I found:
  • Cherry Tomatoes
  • Grape Tomatoes
  • Jalapenos
  • Small green peppers
  • Sweet Onions
  • Tomatillos

Perfect ingredients for a beautiful, fresh salsa -- and all hand picked and organically grown!
Second, I started chopping everything together. I did this in batches, using my Pampered Chef Food Chopper. I seriously love that thing. Of course, both kids loved banging it on the cutting board. It provided a solid seven minutes of entertainment for them before they ran back off to play dinosaurs.
Finally, I seasoned the salsa with a pinch of salt, black pepper, and a touch of cumin, and ladled it carefully into my mason jars. Isn’t it pretty?
I’m so looking forward to opening the freezer in the middle of winter and finding this delicious salsa. It will add a fresh, healthy kick to plain cheese or chicken quesadillas, which my kids absolutely love. 
We only have one more week of our CSA deliveries. I’m glad I’ll have this little reminder of late summer tucked away in my freezer.

Shopping at Wegmans: Alone and Under Budget

I finally got to go shopping by myself the other night.  I love my family, but it's SO much easier to shop when they're not with me. I had a pretty long list, and I was planning on going to Aldi for some of the staples, but they were closed for the holiday weekend!  I ended up just getting everything at Wegmans because I didn't know if I would have time later in the week to pick up the rest of my list.  It was so big, I had to take 2 pictures!
I mostly stayed on list, and I did stay under my $80 budget by $6.25! I was hoping to have a little more left over because I'm planning to do some shopping at the natural foods store next week, plus, we are running low on meat.

Extreme Couponing Lite, Part VI: Finding Coupons You'll Actually Use

As I continue on in my Mindfully Frugal couponing journey, I keep finding more ways to acquire coupons for healthy, wholesome products for my family.  I posted a few weeks ago about unusual places to find coupons.  I’m happy to update that I was recently able to swap some baby product coupons for $4.50 credit to Amazon.  For the cost of a stamp, I was able to save some coupons from the recycle bin, help out another mama, and save myself $4.50 at Amazon!
Here are three more places to obtain coupons for items you’ll actually use:
  • Coupon Train --  A coupon train is a really fun way to get rid of all the coupons that you won’t use while getting fun and often surprising coupons in return.  Here’s how it works: You decide who will be on the coupon train. A “conductor” starts out by sending an envelope full of coupons to the first person on the train.  That person takes out the coupons they can use, and adds coupons to the envelope that she wants to send along, and on and on. This would be fun with a group of friends, but there are many coupon train sites to be found online as well -- like this one.  I’m happily a member of a new “live” coupon train among some of my mom friends. I made this box (sort of like this other one I made), and every time we meet, we put in the coupons we won’t use and take out coupons that we will.  If you don't get multiple newspapers (I don't), this is an easy and free way to get extra copies of particularly good coupons.
  • Vocalpoint -- Vocalpoint is a website that offers coupons and samples for new products, with no obligation on your part. They do ask you for feedback, but it is your choice to give it or not.  I’ll be upfront here: Vocalpoint is owned by P&G, which isn’t one of my favorite companies.  But since you are able to opt-in for the sampling/coupon opportunities, I ignore the ones for products I won’t use.  Don’t discount Vocalpoint though -- last week I got a coupon for a FREE bag of FreshExpress salad.  I’ve also received several coupons and samples of Kashi items from Vocalpoint. You can sign up for Vocalpoint here. 
  • Company Website -- Do you have a favorite natural or organic grocery item that you LOVE but don't buy because it's expensive?  Silk Soy Milk is a good example of this for my family -- two of us have dairy intolerances, so we drink a lot of alternative milk. I always go to the Silk website before I shop, and I haven't paid full price for milk in months.  Bringing these coupons to a store that doubles and combining the coupons with store sales can make these costlier products less than conventional processed foods!  A few of my favorites are:

Menu Plan Monday

Well, today is Labor Day, which means that tomorrow my husband goes back to work (he's a teacher) and summer is officially over. We're back to easy weeknight meals, eating from the freezer, and liberal use of the crock-pot.  In short, life in my house is about to get much busier!

I made this week's menu plan taking into account what we have in the pantry, what we recieve from our CSA share, and what I can either pre-make or make very quickly.

As always, breakfasts are cold cereal, oatmeal, toast, and fruit. Lunches are PB&J, crackers and hummus, or quesadillas.  For snacks my children love organic raisins, fruit smoothies, and Kashi bars.

Here is my dinner plan for the week:

Monday: Chicken Sausage with Grilled Vegetables

Tuesday: Pasta with oil and vegetables and homemade freezer meatballs

Wednesday: Chicken Stir-Fry with Rice (our go-to Wednesday meal since it uses up all the leftover CSA veggies before we get our new box on Thursday)

Thursday: Breakfast for Dinner -- Scrambled Eggs and Homemade Whole Wheat Zucchini Waffles (It'll just be me and the kids so we're going simple on Thursday!)

Friday: Kashi Frozen Pizza (using this coupon) and Green Salad

Saturday: Eggplant Pasta Bake

The only things I'll need to purchase at the store this week to create these dinners will be my Kashi Frozen Pizza and mozzarella cheese for the Eggplant Pasta Bake. Other than that, I have everything I need in my pantry, my freezer, or my CSA basket!  I'll still need some staples that we are low on (milk, rice, and yogurt, for example), but our dinners are pretty well taken care of!
