$5 Dinners: CSA Week 2

This week was a great CSA week. We got scallions, baby spinach, bok choy, and fresh strawberries, among other things. New this week is arugula.  As a fresh salad green, I've mostly only made -- you guessed it -- salads with my arugula. Not this week. I've come up with a beautiful Arugula Frittata for an easy weeknight $5 dinner.  Now, for some people (like my husband), a slice of frittata is not a complete meal.  Adding some breakfast sausage or croissants would be nice ideas for sides to go with the whole "breakfast for dinner" theme.


Arugula Frittata
(adapted from Health Magazine)
2 tsp. olive oil -- $.25
1 cup arugula chiffonade (basically just cut it up into bite-size pieces) $1.50
2-3 large organic eggs  $.90
3 large organic egg whites -- $.90
1/4 cup Pecorino Romano or Parmesan Cheese -- $1.75
2 tbsp chives (fresh or dried) --$.10 
2 tbsp parsely (fresh or dried) --$.10
salt & pepper to taste


1. Preheat broiler to high (yes, you have to turn on the oven, but it's only for a few minutes. You could use a toaster oven, but watch carefully for burning).
2. Saute the mushrooms and arugula in 1 tsp oil until just wilted, set aside
3. In a mixing bowl, whisk the eggs, herbs, and cheese together
4. Add 1 tsp oil into the pan with the mushrooms and arugula, and mix until coated. Season with salt & pepper.
5.  Add egg mixture to the pan; cook on medium for 1-2 minutes.
6.  Pour the entire mixture into a glass pie plate. Broil for 2-3 minutes
7. Serve immediately. Garnish with fresh parsely or chives if desired.


Total Cost: $5.50

My Harrowing Wegmans Trip

Even though I wasn't feeling well yesterday, I ventured out with both kids around 9 am to try to do some of the deals I wanted to get at Wegmans. We first stopped at Aldi, and by the time we got to Wegmans, both kids were a little goofy, I was starting to feel worse, and I had a huge stack of coupons I wanted to use. You can see where this is going.


I love how Wegmans has a bin of cookies and fruit just for kids. It really does help. Unfortunately, the cookies are only about 1" diameter and both kids snarfed theirs up in about 2 seconds. The other 44.08 minutes of the trip were challenging, to say the least. 


Thank goodness I had my list & coupons organized. I generally write my list in order of where the product is in the store, and I sort my coupons the same way, so I don't have to go rifling through the whole stack to double check my prices. 


I was able to cruise through produce, Nature's Marketplace, and grocery pretty quickly, but the kids were losing it when we got to health & beauty. Emma was kicking Mason. Mason was kicking Emma because she was kicking him. I was yelling at Mason for kicking Emma for kicking Mason. We weren't a pretty sight. 


Finally we got to the register. I did some quick recon and found a register with a short line and a young teenage checker.  If I had looked a little closer, I would have seen the 15 (!) bottles of toilet bowl cleaner and 72 rolls of toilet paper the man ahead of me was buying.  Normally, I am really patient -- I am usually that crazy coupon lady myself, so I'm certainly not in the position to complain. But the transaction wasn't going through, multiple managers had to be called, and the kicking from all angles in my cart continued. 


Thankfully, our checker was unflappable, apologized for the hold-up, and scanned all my coupons through with no problems. I breathed a sigh of relief.


Forty-five minutes later, we walked out of the store. I was exhausted, and so were both kids. Unfortunately, it was only 10:30 -- too early for naptime. 


My stats for this trip:
Total Before Coupons: $77.19
Total Out of Pocket: $53.30
Manufacturer Coupons: $9.55
Doubled Coupons: $4.55
Wegmans' Store Coupons: $7.00 
Shopper's Club Savings: $2.79
Total Saved: $23.89


Combined with my Aldi total of $19.59, I spent $72.89 total on groceries this week.

$10 for$26 to Spend on Organic Tees at Dealpulp

One thing I struggle with on my frugal journey is how to get affordable clothes for the whole family,  yet stay true to my eco-friendly mission.  It's always easy to buy secondhand, which I consider a form of recycling.  Organically made children's clothes are much harder to come by, I've found.


That's why I was really excited when I saw this deal at Dealpulp today: $10 for $26 worth of organic cotton and bamboo tees from Ragaboo-online.com.  The T-shirts they offer are adorable and completely sustainable.  All the designs are made from low-impact dyes and are free of synthetic chemicals.

Aldi's Trip: Under $20 AGAIN!

I had both kids with me for my shopping this week, and since Aldi was only my first stop, I really wanted to get in and out.   I was thrilled to see that they had Lifeway Kefir (or “strawberry milkshake” as my kids know it!) for $2.49/bottle again.  They also had Bolthouse Farms 100% Organic Carrot Juice for only $2.69/bottle (normally $4.29 at Wegmans). I didn’t buy any though, because I’ve never tried carrot juice.  Is there a reason why I should?
I also found blueberries from New Jersey for only $1.99 -- I prefer to buy local, but both kids were with me and were dying for them, so I figured that would be a good treat for cooperating at the store.
The total was $19.59, and here’s how it broke down:
Whole Milk, 1 gallon -- $1.95
Lowfat Kefir -- $2.49
Wild Salmon, 1 lb -- $4.49
String Cheese, 12 oz -- $2.99
Smoked Ham, 1 lb -- $3.29
Blueberries -- $1.99
Butter quarters -- $2.39
Sadly, the price of butter is up $.10 since the beginning of June, but Aldi’s price is still cheaper than Wegmans price of $2.79.  I’ve been shopping at Aldi for about 2-3 months now and I definitely see a difference in my grocery bill. I need to scrutinize my receipts to come up with an exact amount, but I would say at least $10/week. But part of that may be a combination of menu-planning and shopping with a list.

Oh, and as a side note, I saw the sidewalk chalk I bought for $2.69 a couple weeks ago at Aldi's at Wegmans today. It was "on sale" for $5.99. So glad I shopped around!

Menu Plan Monday

I decided to change things up a little today; instead of Make it Yourself Monday, we’re doing Menu Plan Monday!  Don’t worry, it’s not because I am at a loss for ideas for Make it Yourself items, it’s just been a busy week and I haven’t had time to try them out.
This week is going to super-busy as well, so I’d like my menus for the week to be simple and easy to prepare. As always, I’ll be shopping the sales and using what’s in my stockpile to round the meals out.
Breakfasts are easy: we have either:
Yogurt and Fruit
Cereal with Milk
Oatmeal and Fruit
Lunches are pretty similar as well (what can I say, my kids only want to eat the same three things!):
Ham & cheese sandwich
Grilled cheese sandwich
PB&J sandwich
Hummus & crackers
Fruit
Dinners -- this is where things get tricky. The meal that takes the longest to make is right during the crankiest part of the day. Because of this, I purposefully like to plan things that are either really easy or can be made ahead. Here are my ideas for this week:
Monday -- Chicken Sausage and sweet potato fries
Tuesday -- Grilled Salmon and rice with salad using CSA greens and radishes
Wednesday -- Homemade chicken “nuggets” with homemade fries (frozen, bake in toaster oven)
Thursday -- Pasta with Greens & Beans using fresh CSA kale
Friday -- Dinner out to celebrate the last day of school
Saturday -- Grilled chicken with green salad
Sunday -- Dinner out with family
